Veg Fried Rice Recipe

Ingredients:

Basmati rice

Carrots

Beans

Capsicum

Green peas

Cashews

Raisins

Black pepper powder

Sugar

Cardamom

Cloves

Cinnamon

Ghee

Cooking oil

Bay leaf

Salt

Garam masala powder


Preparation:

1. Wash the rice and soak it for one hour.


2. Boil water in a pot. Once the water starts boiling, add the soaked rice. When the rice is 80% cooked, drain the water and set the rice aside (do not cook it fully).


3. In a pan, heat some oil, fry the cashews and raisins, and set them aside.


4. In the same pan, add 2 tablespoons of ghee. Add the bay leaf, crushed cardamom, cloves, and cinnamon to the ghee and fry until fragrant.


5. Add the chopped carrots, beans, capsicum, green peas, and salt to the pan and sauté them well.


6. Once the vegetables are cooked, add sugar and stir until it dissolves. Add the partially cooked rice and stir-fry for 5 minutes.


7. Add black pepper powder, the fried cashews, and raisins. Adjust the salt and sugar to taste if needed. Keep stirring on low heat for about 15 minutes.


8. Finally, sprinkle garam masala powder on top, drizzle with one spoon of ghee, and turn off the heat. Cover the pan and let it sit for 10 minutes.



Your light and fluffy fried rice is ready!

Chicken Fried Rice Recipe

Ingredients:

Polao (Basmati) rice

Chicken (boneless, minced)

Onion

Green chilies

Capsicum

Carrots

Spring onions

Green peas

Turmeric powder

Cumin powder

Red chili powder

Ginger paste

Garlic paste

Cardamom, cloves, cinnamon

Oil

Salt (to taste)


Mixed Sauce:

2 tablespoons soy sauce

2 tablespoons tomato sauce

1 tablespoon chili sauce

1 teaspoon sugar


Preparation of Mixed Sauce: Mix soy sauce, tomato sauce, chili sauce, and sugar in a bowl to make the mixed sauce. Since soy sauce contains salt, be careful when adding more salt later.

Preparation:

1. Wash the rice and soak it in water for 30 minutes.


2. Clean the minced chicken and marinate it with salt, turmeric, and a few spoons of the mixed sauce. Let it rest for 30 minutes.


3. Drain the soaked rice. Boil enough water to cook the rice. Once it starts boiling, add a bit of oil and the rice. Cook the rice until it's firm but not too soft. Drain the water and set the rice aside.


4. In a pan, heat oil and fry the marinated chicken until it's cooked and soft. Keep the heat low while frying the chicken.


5. In another pan, heat oil, add cumin seeds, cardamom, cloves, and cinnamon for tempering. Add chopped onions and fry until slightly golden.


6. Add chopped vegetables (carrots, green peas, capsicum) and stir-fry. Add salt to taste. Once the vegetables are cooked, add green chilies, ginger, garlic paste, and spring onions. Stir well until the raw smell of the ginger and garlic is gone.


7. Add the fried chicken to the vegetable mixture and mix well. Remove the mixture from the pan.


8. In the same pan, add a little more oil. Add the rice in portions, mixing it with the chicken and vegetable mixture gradually. Taste for salt and adjust if necessary. Once the rice and mixture are well combined, drizzle with the prepared mixed sauce and stir.


9. Turn off the heat, sprinkle crushed red chili on top, cover with a lid, and let it sit for 10 minutes.



And your delicious Chicken Fried Rice is ready to serve!
